Mushroom and Eggplant Ragu

Mushroom and Eggplant Ragu

Hearty, flavorful and seriously good for you. This is the perfect dish for a Meatless Monday (aside from the beef broth), or any other day of the week for that matter. So stinking bomb that it actually inspired me to plant eggplants in my garden this year for the sole purpose of making this meal.

This recipe is fool-proof. Combine your marinade and be patient.  The longer you marinate the better it's going to be. Sear, and finish off in the oven. Couldn't be easier....

Classic Chili

Chili and football go together like peanut butter and jelly, macaroni and cheese, Uncle Jesse and Aunt Becky...the list could go on and on.  What's your favorite season? Correct answer: football season. I love making a big spread for game day but every once in a while it's nice to just keep it simple and get a big batch of chili going bright and early.

Gluten Free Caramelized Onion, Beet, Goat Cheese & Bacon Pizza

Gluten Free Caramelized Onion, Beet, Goat Cheese & Bacon Pizza

Beets and goat cheese is a match made in heaven.  Add in a caramelized onion based sauce and top with loads of bacon? I'm drooling all over my keyboard. This is delicious and beets are super healthy (so they offset the rest of the ingredients) and that's all you need to know.

Four Cheese Stuffed Mushrooms

The sauce was a Hail Mary and I think I surprised even myself with it.  For something so simple and easy it was packing a lot of great flavor and complimented the mushrooms perfectly.  The tanginess of the pasta with the creaminess of the meaty mushrooms were a match made in food heaven.
