These are an easy go-to breakfast where you can add whatever vegetables, meats and cheeses you have on hand. Add some cooked bacon or sausage for a meatier twist. Add mushrooms, tomatoes, spinach, kale, broccoli, the sky's the limit!
I suppose I say I'm not a breakfast person because if you gave me the choice, I would almost always pick macaroni and cheese or a cheeseburger over traditional breakfast grub, but I'm working on it - and this egg bake is enough to convert me most days.
