I’m obsessed. These are easy, delicious and a nice light way to indulge over the holidays when everything else seems so dang heavy. I got a, “these are way too fancy for this crew” at one of the holiday parties I brought them to but seriously there is nothing fancy about them - they could not be easier. “Fancy” or not, they were gone quickly and a big hit everywhere they made an appearance at this holiday season.

Another reason I love these is because you can adapt them so easily to suite your own tastes. Not a fan of smoked salmon? Put halved cherry tomatoes, roasted red peppers or shrimp on top. Want more dill or other flavoring in the cream cheese mixture? Add whatever spices/herbs you like!

Ingredients

1 8oz package of cream cheese - near room temperature

3/4 c. plain greek yogurt

1 1/2 t. dry dill weed or 1 1/2 T. fresh dill (fresh is always better but I just use whatever I have on hand).

1 4oz package of sliced smoked salmon

1 large english/seedless cucumber

Trader Joe’s Everything but the Bagel Seasoning Blend

Directions

  1. Use a hand mixer to mix cream cheese, greek yogurt and dill in a medium-sized mixing bowl until well-combined, light and fluffy (2-3 minutes).

  2. Use a rubber spatula to transfer cream cheese mixture to a piping bag or gallon-sized ziplock. Cut the tip of the piping/ziplock bag.

  3. Rinse the cucumber and cut into discs approximately 1/8” thick.

  4. Pat the cucumber Slices dry with a paper towel and then transfer to your serving tray.

  5. Pipe a dollop of cream cheese mixture onto each cucumber slice.

  6. Cut the smoked salmon into square(ish) bites, approximitely 1” in size. Place one piece on top of each dollop of cream cheese.

  7. Sprinkle generously with Trader Joe’s Everything but the Bagel seasoning blend.

Time: 10 minutes
